Soraie is made from partially dried grapes (for a few weeks, rather than months) prior to fermentation - the same 'appassimento' method as used in Amarone. It is a blend of local and international grapes grown on the very top of the hills (hence the name Soraie), where the sun and cool breeze ripen the best grapes.
Cecilia Beretta is owned by the Pasqua family based just east of Valpolicella near Verona, named after the C17 agronomist & poet Count Guiseppe Beretta who built the beautiful Mizzole villa in the heart of the vineyards.
